Chickpea & spinach stuffed mushrooms
Roasted mushroom caps hold a coarse chickpea-spinach filling and a thin breadcrumb topping.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat the oven to 400°F (200°C). Separate the stems from the caps and chop the stems finely. Rub caps with 0.176 oz of the oil; place hollow-side up in a baking dish and roast for 10 minutes. Tip released liquid into the filling skillet, preserving edible juices.
- While caps roast, heat another 0.353 oz oil in a skillet. Cook chopped stems for 4 minutes. Add garlic and spinach and cook for 2-3 minutes until wilted; add cap juices and cook until no loose liquid remains.
- Mash chickpeas coarsely and combine with the skillet mixture, lemon juice, salt and pepper. Divide all filling among twelve caps. Mix breadcrumbs with the remaining 0.176 oz oil and distribute over them.
- Bake for 15-18 minutes until caps are tender and the filling is hot throughout. Serve three per portion. Refrigerate leftovers within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted bread slices, stuffed mushrooms, zucchini boats and eggs are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
