  1. If using wooden skewers, soak 6 in water for 30 minutes, using a dish long enough to submerge them. Heat the oven to 425°F (220°C) and line a rimmed baking sheet with foil.
  2. Mix oil, garlic, salt and pepper. Toss the whole mushrooms in this mixture. Thread onto the 6 skewers without crushing them and arrange with space on the tray.
  3. Roast for 18–22 minutes, turning after 10 minutes, until mushrooms are browned and tender. If mushroom sizes vary, judge tenderness rather than time alone.
  4. Mix lemon juice and parsley. Brush over the hot mushrooms, rest for 3 minutes, and serve 1 skewer per portion for 6 appetizers. Skewers are sharp; remove mushrooms before serving to anyone who cannot safely handle them. Refrigerate promptly in a shallow covered container at 40°F (4°C) or colder, within 2 hours or within 1 hour above 90°F (32°C). Use within 3–4 days. Reheat leftovers to 165°F (74°C).
