Let’s make it

  1. Heat the oven to 425°F (220°C). Toss the eggplant with 0.847 oz of the oil and the salt. Spread over a large rimmed baking sheet in a single layer. Roast for 25–30 minutes, turning halfway, until browned and completely tender.
  2. Meanwhile, heat the remaining 0.423 oz oil in a broad skillet over medium heat. Cook the onion and celery for 10–12 minutes, stirring, until softened. Add the tomatoes and cook uncovered for 12–15 minutes, until their juices form a thick sauce.
  3. Stir in the olives, capers, vinegar and sugar. Simmer for 3 minutes, then fold in the roasted eggplant and any tray oil without crushing the cubes. Cook gently for 3 more minutes.
  4. Remove from the heat, fold in the basil and rest for 10 minutes before dividing into six equal appetizer portions. Bread is optional and is not included in the recipe or nutrition.
  5. Refrigerate leftovers promptly in a shallow covered container at 40°F (4°C) or below and use within 3–4 days. This is a refrigerated relish, not a shelf-stable preserve.
