Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Clean mushrooms, remove tough stem ends and weigh the edible about 1 lb + 2 oz (500 g). Keep small mushrooms whole and halve larger ones to similar thickness. Do not peel the caps.
  2. Put mushrooms, water, 10 g oil and salt in a wide covered skillet. Cook over medium heat 8-10 minutes, stirring twice, until mushrooms release liquid and soften. Uncover, add sliced garlic and cook gently 2-3 minutes until no raw garlic bite remains; retain all pan juices.
  3. Off heat, stir in remaining about 3 tsp (15 g) oil, lemon juice, vinegar, parsley, thyme and pepper. Transfer all mushrooms and liquid to a shallow nonreactive container; let steam subside about 15 minutes, then cover and refrigerate at least 60 minutes.
  4. Toss before serving and divide all mushrooms and dressing among 6 appetizer portions. Use a clean spoon rather than draining away the marinade. The 110-minute allowance includes preparation, cooking and chilling.
  5. Keep at 40 F /4 C or colder and use within 3-4 days. Refrigerate within 2 hours, or 1 hour above 90 F /32 C. This is a perishable chilled appetizer, not an oil-preserved or shelf-stable product.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Six portions include all cooking juices and marinade. Vegan/vegetarian and dairy-free depend on plain ingredients and suitable vinegar. Gluten-free requires verified labels/cross-contact precautions. Mediterranean-style criterion: vegetable bulk, olive oil and herbs; no disease claim.
