Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Stir the canned coconut milk until its thick cream and liquid are evenly combined. Mix cornstarch with about 2 tsp (10 g) cold water in a small bowl.
  2. Warm oil in a small saucepan over medium-low heat. Cook ginger and garlic for 1–2 minutes, stirring, until fragrant without browning.
  3. Add coconut milk, sugar, salt and remaining about 2 tbsp (30 g) water. Bring to a gentle simmer, then cook 5–7 minutes, stirring frequently and scraping the base; do not boil hard.
  4. Stir the slurry again, whisk into the sauce and simmer gently 1 minute until lightly coating a spoon. Remove from heat, stir in lime juice and stand 5 minutes before serving. Retain all ginger and garlic; do not strain.
  5. Divide into 6 equal portions. Refrigerate leftovers in a shallow covered container within 2 hours, or 1 hour above 90 F /32 C. Use within 3–4 days; reheat gently while stirring to 165 F /74 C, then cool briefly before eating.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Six equal shares of complete sauce; no curry, fish, rice or other accompaniment included. Coconut-milk fat varies substantially by brand. Vegan/Gluten-Free/Dairy-Free require label and cross-contact checks; no fish sauce or dairy used.
