  1. Whisk tahini, lemon juice, garlic and salt in a bowl. It may become stiff at first.
  2. Whisk in the 2.12 oz water a little at a time until smooth. Add up to 0.705 oz more water for a pourable sauce.
  3. Divide into 6 equal portions, roughly 1.06 oz–1.16 oz each. No serving vegetables or bread are included. Refrigerate promptly in a shallow covered container at 40°F (4°C) or colder, within 2 hours or within 1 hour above 90°F (32°C). Use within 3–4 days. The sauce thickens when cold; stir in a small splash of water before serving.
