Roasted carrot & ginger sauce
A smooth orange sauce with sweet roasted carrots, fresh ginger and a bright lemon finish.

Let’s make it
- Heat the oven to 400°F (200°C). Toss the carrots with the olive oil and salt on a rimmed baking sheet, then spread into one layer.
- Roast for 20 minutes. Turn the carrots and tuck the whole garlic cloves among them; roast for another 10–15 minutes, until the carrots are completely fork-tender and lightly browned.
- Transfer carrots, garlic and any tray oil to a tall heatproof container. Add the water and let stand for 5 minutes. Add the ginger and lemon juice.
- Use an immersion blender with its head submerged to blend until smooth, pausing to scrape the sides. If using a countertop blender, let the mixture cool until no longer steaming and follow its hot-liquid instructions; never seal hot contents in a personal blender. Allow additional cooling time for the countertop-blender option.
- Divide into 8 equal condiment portions. Serve warm or chilled. Refrigerate promptly in a shallow covered container, within 2 hours or 1 hour above 90°F (32°C), and use within 3–4 days. When reheating, stir and bring the sauce to a boil.
