Homemade sesame bagels
Chewy sesame-topped bread rings made from a firm yeast dough, briefly boiled in plain water and then baked.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Mix the yeast and sugar with the 9.52 oz lukewarm dough water, about 100–110°F / 38–43°C. Let stand for 5–10 minutes until foamy. Add flour and salt; knead for 10–12 minutes until a firm smooth dough forms.
- Cover in a bowl and rise for 60–90 minutes until noticeably puffy. Divide into eight equal pieces and shape into tight balls. Cover and rest for 10 minutes.
- Push a finger through each ball and stretch the center into a hole about 1 1/2 inches / 4 cm across. Arrange on parchment, cover loosely and rest for 15–20 minutes while heating the oven to 425°F / 220°C.
- Bring 8 cups + 7 tbsp + ¾ tsp plain water to a gentle boil in a wide saucepan. Boil two or three bagels at a time for 45 seconds per side, maintaining space for them to float. Lift with a slotted spoon and let excess water drain briefly.
- Place on a parchment-lined tray. Divide the 0.847 oz sesame seeds evenly over the eight still-damp tops and press lightly so they adhere. Bake for 20–25 minutes until golden brown and the interiors are set, with no raw dough.
- Cool on a rack for at least 30 minutes before slicing. Never taste raw dough. Store cooled bagels covered for up to 2 days or freeze promptly for longer storage.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. One serving is one of eight equal dough portions. Plain boiling water adds no energy; no invented sugar-bath retention factor is used. Contains wheat and sesame. Vegan/dairy-free status requires suitable flour, yeast, sugar and seed labels and does not cover cross-contact.
