Mushroom & sunflower spread
Browned mushrooms and ground sunflower kernels make a savory, finely textured spread with thyme and lemon.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Toast sunflower kernels in a dry large skillet over medium-low heat for 3-4 minutes, stirring, until lightly golden. Transfer to a plate.
- Warm oil in the skillet. Cook onion for 6-8 minutes until soft, then add mushrooms. Cook over medium to medium-high heat for 12-15 minutes, stirring, until released moisture evaporates and some pieces brown.
- Add garlic, thyme, salt and pepper for 1 minute. Remove from heat and cool for 10 minutes. Grind toasted sunflower kernels in a processor to a coarse meal.
- Add mushroom mixture, all pan oil, lemon juice and water. Pulse, scrape and blend until spreadable with fine mushroom texture, following the appliance instructions for warm food. Divide into eight equal portions. Refrigerate in shallow covered containers within 2 hours and use within 3-4 days. Check seed and seasoning labels for diet-relevant coatings or additives.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Uses raw white button mushroom and plain dried sunflower-kernel profiles; all cooked mushrooms, seeds and listed oil are included. Toasting changes moisture without an invented nutrient-retention adjustment.
