Onion & sesame bialys
Unboiled chewy yeast rolls with broad thin centers holding a small amount of cooked onion and sesame.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Stir yeast into all water and wait 5-10 minutes until bubbling. Add about 14 oz (400 g) flour and 7 g salt, mix and knead 8-10 minutes to a smooth firm dough. Use the reserved 3 g oil on bowl and hands rather than adding flour.
- Cover in the oiled bowl and rise 60-90 minutes until nearly doubled. Meanwhile, cook onion in 12 g oil with the remaining 1 g salt over medium-low heat for 12-15 minutes, stirring, until soft and no watery liquid remains. Stir in sesame and cool completely; retain all onion and oil.
- Divide dough into eight equal pieces and round them using the 20 g handling flour as needed. Cover and rest 20 minutes, then flatten gently into rounds about 10 cm wide. Transfer to two parchment-lined trays, cover loosely and proof 30-40 minutes until puffy.
- Heat oven to 450 F / 230 C during proofing. Press and stretch each center into a broad, very thin depression while keeping a raised rim; do not pierce a hole. If the dough springs back, cover for 5 minutes, then continue. Distribute all onion-sesame filling thinly over the eight centers. Brush remaining handling flour onto the dough rims.
- Bake both trays for 14-18 minutes, swapping shelves halfway, until lightly golden and the thin centers are baked through. Keep filling in the depressions, not piled over the rims. Cool on a rack at least 30 minutes before serving.
- One bialy is one eighth of the batch. Total 260 minutes includes preparation, proofing, baking and cooling with margin; cool rooms can take longer. Use cooled rolls within 2 days or freeze.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Eight equal rolls with one eighth of the onion-sesame mixture each; no physical baked weight or cup yield claimed. Contains wheat and sesame. Vegan and Dairy-Free require plain ingredients and label/cross-contact checks.
