Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Stir yeast into all water and wait 5-10 minutes until bubbles appear. Mix in about 10 ½ oz (300 g) flour, salt and 5 g oil with a sturdy spoon until no dry patches remain. The dough will be very wet; do not add extra flour.
  2. Use the remaining 3 g oil to coat a wide bowl and your fingertips. Place dough in the bowl, cover and rest 30 minutes. Lift one edge and fold it over the center; repeat from the other three sides without tearing. Cover.
  3. Repeat a four-sided fold after another 30 minutes and again 30 minutes later, giving three fold sets in total. Then let the covered dough rise for 45-60 minutes until puffy with visible bubbles. At a cool room temperature, allow more time.
  4. Use 10 g of the reserved flour to dust a clean surface. Tip out dough gently and pat into a rectangle without pressing out its gas. Cut into six equal portions with a scraper, transferring them onto a parchment-lined tray with space between them. Use all remaining 10 g flour to dust their tops; brush any flour left on the work surface onto the rolls.
  5. Cover loosely without touching the dough and proof 40-60 minutes until visibly puffy. Preheat oven to 450 F / 230 C during the last 30 minutes. Bake 22-28 minutes until golden with firm crusts and centers around 205-210 F / 96-99 C.
  6. Cool on a rack at least 60 minutes before splitting. Total 360 minutes allows mixing, three folds and rests, final proof, baking and cooling; cooler conditions may take longer. One roll is one sixth of the batch. Use within 2 days or freeze fully cooled rolls.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Six equal rolls; no measured baked mass. All flour, water, yeast, salt and oil included; no starter or fermentation-retention adjustment. Contains wheat; naturally dairy-free and vegan ingredients, subject to label/cross-contact checks.
