  1. Wrap grated zucchini in a clean towel and squeeze firmly to remove excess liquid. Do not add salt before squeezing. Whisk flour, baking powder, salt and pepper in one bowl; whisk eggs and milk in another.
  2. Stir wet ingredients into dry just until no dry flour remains, then fold in zucchini and corn. Rest for 5 minutes. The batter should mound softly rather than flow like milk. Do not taste raw flour-and-egg batter.
  3. Heat a large nonstick skillet over medium-low heat. Use the measured oil across four batches. Spoon batter into 12 equal small pancakes, cooking three at a time with space between. Cook for 3-4 minutes on the first side and 2-3 minutes after flipping, until golden with a set center; check the center reaches 160°F (71°C). Lower heat if the outside colors before the inside sets.
  4. Serve three pancakes per portion. Refrigerate within 2 hours, use within 3-4 days and reheat to 165°F (74°C). Nutrition counts all the weighed raw zucchini and oil; small losses from squeezing and pan residue are not measured. No topping or side is included.
