  1. Heat oven to 375°F (190°C). Whisk eggs, milk, salt, and pepper.
  2. Heat oil in a 10-inch oven-safe skillet. Cook onion over medium heat for 5 minutes.
  3. Add spinach and stir until wilted. Spread evenly, pour in eggs, and scatter feta on top.
  4. Cook on the stove for 2 minutes, then transfer to the oven for 10–15 minutes, until the center reaches 160°F (71°C).
  5. Use oven mitts to handle the hot skillet. Rest for 3 minutes and slice.
