  1. Heat the oven to 350°F (175°C). Use 0.0705 oz oil to coat an 8-inch (20 cm) square baking dish. Stir the oats, baking powder, cinnamon and salt together.
  2. Whisk the milk, eggs, mashed banana, maple syrup and remaining 0.282 oz oil in another bowl. Stir into the oat mixture until every oat is moistened.
  3. Fold in the sliced banana and strawberries. Spread evenly in the dish, distributing fruit rather than leaving a wet pile in the center.
  4. Bake for 35–40 minutes until the center is set with no liquid egg mixture and reaches 160°F (71°C). If necessary, bake a little longer, checking at 3-minute intervals.
  5. Rest for 10 minutes before cutting into six equal portions. Refrigerate leftovers promptly at 40°F (4°C) or below, use within 3–4 days and reheat to 165°F (74°C).
