Sweet potato & rosemary quick bread
A savory orange-gold quick bread with mashed sweet potato, olive oil and small rosemary flecks.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Steam the 8.82 oz sweet potato over simmering water for 12-15 minutes until easily mashed. Drain any surface water, mash all of it and cool for 15 minutes. Heat the oven to 350°F (175°C); line a 9-by-5-inch loaf pan with parchment.
- Whisk eggs, yogurt and oil into the cooled mash. In a separate bowl combine flour, baking powder, crushed rosemary and salt. Fold dry into wet just until the flour disappears; do not beat or knead.
- Spread the thick batter evenly in the pan. Bake for 45-55 minutes until the center is set and a thin skewer comes out without wet batter. If the top darkens early, tent loosely with foil.
- Rest in the pan for 10 minutes, lift onto a rack and cool at least 30 minutes before cutting into ten equal slices. The elapsed estimate includes steaming, cooling and baking. Refrigerate cooled slices within 2 hours and use within 3-4 days or freeze.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted bread slices, stuffed mushrooms, zucchini boats and eggs are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
