Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Blot drained tofu with clean towels and crumble into pea-sized pieces. Wash lettuce leaves, dry thoroughly and refrigerate until serving.
  2. Heat canola oil in a wide 12-inch (30 cm) skillet over medium-high heat. Cook chopped mushrooms 7-9 minutes, stirring, until their liquid evaporates. Add tofu and cook 8-10 minutes, turning occasionally, until some crumbles have golden edges.
  3. Stir in carrot, ginger and garlic and cook 3 minutes. Add soy sauce and cook 1-2 minutes until no liquid pools. Remove from heat; stir in lime juice, sesame oil and scallion. Let stand 5 minutes so the hot filling does not immediately wilt the leaves.
  4. Divide all filling among twelve lettuce leaves and serve three cups per portion. Refrigerate filling and leaves separately within 2 hours, use within 3-4 days and reheat filling to 165°F (74°C) before cooling briefly and assembling.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All measured oil and sauce counted; no separate dipping sauce included. Soy sauce contains wheat, so no gluten-free tag. Vegan/dairy-free suitability requires checking tofu and sauce labels for animal ingredients; contains soy and sesame.
