Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Warm oil in a wide saucepan over medium-low heat. Cook onion for 7-8 minutes until soft. Add ginger, garlic and cumin and stir for 1 minute.
  2. Add tomatoes and all their juice, vinegar, brown sugar and salt. Bring to a gentle simmer, then cook uncovered for 25-35 minutes, stirring more often as it thickens.
  3. Stop when the tomatoes have collapsed into a chunky relish and a spoon drawn across the pan leaves a brief trail. Do not reduce until sticky or dry. Cool for 10 minutes before serving. Divide the complete batch into eight equal portions.
  4. Refrigerate in shallow covered containers within 2 hours and use within 3-4 days. This is a refrigerated condiment, not a tested canning recipe; vinegar and sugar do not make it shelf-stable. Check packaged seasonings and vinegar for additions relevant to diet tags.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All fresh tomato juices and measured sugar and oil are included; reduction changes water weight, not the eight equal portions.
