Whole-wheat sesame crispbread
Thin whole-wheat crackers with embedded sesame seeds and a dry, crisp snap.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Mix both flours, sesame and salt. Add water and oil, stir to a dough and knead in the bowl for 2 minutes. Cover and rest 20 minutes. Do not taste raw dough.
- Heat oven to 350°F (175°C). Divide dough equally in two. Roll each half between parchment sheets to a rectangle about 12 by 16 inches (30 by 40 cm), roughly 1/16 inch (1.5 mm) thick. Remove top paper.
- Cut each sheet into 16 rectangles and prick each with a fork. Slide bottom parchment onto two baking sheets. Bake 20-30 minutes, rotating trays and swapping shelves halfway. Remove browned edge crackers as needed; bake remaining pieces until dry and golden.
- Cool on racks for 15 minutes. A cooled piece should snap; if a center bends, return it to a 300°F (150°C) oven for 5-10 minutes, then cool again. Divide into eight portions of four crackers. Store fully cooled in an airtight container for up to 5 days.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Profiles match raw edible produce and proteins, dry grains and flour, drained canned beans, tomatoes with juice, plain whole-milk yogurts and specified cheese. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
