A puffed oven pancake with golden edges is served with warm blueberries and lemon.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat oven to 425°F (220°C) with an empty 10-inch (25 cm) ovenproof cast-iron skillet inside for 15 minutes. Blend flour, eggs, milk, 0.353 oz sugar, 0.0705 oz lemon zest and salt until smooth; let stand 10 minutes while oven heats. Do not taste raw batter.
- With oven mitts, remove the hot skillet, add butter and swirl until melted without letting it scorch. Pour batter into the center and immediately return to the oven. Bake 18-22 minutes without opening the door early, until edges are puffed and golden and the center is set with no wet batter.
- While it bakes, combine blueberries, remaining 0.705 oz sugar, lemon juice and water in a small saucepan. Simmer gently 5-7 minutes, stirring occasionally, until some berries burst and juices lightly thicken. Keep warm.
- Remove the skillet carefully; check the pancake center reaches at least 160°F (71°C). Serve promptly in four wedges with an equal share of all blueberry topping and remaining 0.0353 oz zest. The puff settles naturally. Refrigerate leftovers within 2 hours, use within 3-4 days and reheat to 165°F (74°C).
