Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat the olive oil in a wide heavy skillet over medium-low heat. Add onions and salt; cook for 10 minutes, stirring frequently, until softened.
  2. Continue cooking for 35–45 minutes, stirring every few minutes, until the onions are deeply golden and sweet-smelling. When browned residue begins sticking, add a little of 1.76 oz of the measured water and scrape it back into the onions. Lower the heat if edges blacken.
  3. Add the raisins, balsamic vinegar, thyme and remaining 1.76 oz water, plus any unused water from the first 1.76 oz. Simmer gently for 10–15 minutes, stirring often, until the raisins are plump and the mixture is thick with no loose puddle.
  4. Cool for 10 minutes, then divide into eight equal portions. Serve as a spread, retaining all onions and liquid. Refrigerate promptly in a shallow covered container and use within 3–4 days. This is not a shelf-stable preserve.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All measured oil, raisins and vinegar are included; divide finished batch equally into eight portions. Vegetable bulk and olive oil support the ingredient-based Mediterranean-style classification. Vegan/gluten-free/dairy-free tags require suitable vinegar, dried fruit and spice labels.
