Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oven to 425°F (220°C). Toss cauliflower, pepper and onion with 0.705 oz oil, cumin, paprika and half the salt. Spread on a large rimmed baking sheet with gaps. Roast 20 minutes, turning once.
  2. Meanwhile bring rice, water and remaining salt to a boil in a saucepan. Cover, lower heat and simmer 15-18 minutes until tender and water absorbed; rest off heat, covered, 5 minutes. If needed, add a small splash of water and cook a few minutes longer.
  3. Add drained kidney beans to the roasting vegetables and stir gently. Roast 8-12 minutes more, until beans are hot and cauliflower is tender with golden edges.
  4. Whisk remaining 0.353 oz oil with lemon juice, then toss through vegetables and beans with parsley. Fluff rice and divide it and all the topping into four equal bowls. Refrigerate in shallow containers within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Profiles match raw edible produce and proteins, dry grains and flour, drained canned beans, tomatoes with juice, plain whole-milk yogurts and specified cheese. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
