  1. Cook penne in salted boiling water according to its package. Reserve 200 ml cooking water and drain.
  2. Meanwhile warm olive oil in a large skillet. Cook garlic for 30 seconds and add both kinds of tomato, dried basil, salt, and pepper.
  3. Simmer for 12 minutes, stirring occasionally.
  4. Toss penne with the sauce and half the Parmesan. Loosen with cooking water as needed.
  5. Serve with the remaining cheese and fresh basil.
