Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat 0.353 oz oil in a wide deep lidded skillet over medium-high heat. Add chicken in a single layer and brown for 4-5 minutes, turning once. Transfer it and its juices to a clean plate; it is not yet cooked through.
  2. Add the remaining 0.353 oz oil and mushrooms to the skillet. Cook for 7-9 minutes until released liquid mostly evaporates. Add onion and cook 5 minutes, then stir in garlic and thyme for 30 seconds.
  3. Stir in the dry buckwheat, water, salt and pepper. Bring to a simmer, return all chicken and juices, cover and reduce heat to low. Simmer for 15-20 minutes until the groats are tender and the chicken reaches 165°F (74°C) in the thickest pieces.
  4. If the groats are still firm and the pan is dry, add 1.06 oz hot water and cook covered for another 3-5 minutes. Rest off heat, covered, for 5 minutes; fold gently and divide into four equal portions. Refrigerate within 2 hours in shallow containers, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Ingredient states match their named profiles: raw edible produce and proteins, dry grains, drained canned beans and frozen unprepared peas. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted bread wedges, sweet potato rounds, fish cakes, cabbage rolls, breakfast squares and cookies are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
