Chicken, raisin & almond rice pilaf
Chicken thigh pieces bake over cumin-scented long-grain rice with raisins and chopped almonds.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat oven to 375°F /190°C. Pat chicken dry without rinsing. Heat oil in a wide about 11 cups (2500 ml)–about 13 cups (3000 ml) oven-safe lidded casserole. Brown chicken in two batches for 3 minutes per side, then transfer to a plate; it is not yet cooked through.
- Cook onion in the same pan for 5 minutes. Stir in dry rice and cumin for 1 minute, then add raisins, almonds and salt. Pour in all boiling water and stir once, scraping the base.
- Return chicken and every plate juice, arranging pieces evenly over rice. Bring liquid back to a simmer, cover tightly and transfer to oven. Bake 30-35 minutes without lifting lid.
- Check rice is tender and every chicken portion reaches 165°F /74°C. If rice is still firm and liquid remains, cover and bake 5-10 minutes longer. If dry and firm, add about 2 tbsp (30 g) boiling water at a time as needed, recording any addition; water adds no nutrients.
- Rest covered 10 minutes after rice and chicken are done. Fluff gently and divide all chicken, rice, raisins, almonds and juices into four portions. Cool leftovers promptly in shallow containers, refrigerate within 1 hour, use within 24 hours and reheat once to 165°F /74°C.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. One quarter of the full casserole; all oil and inclusions counted. Contains almonds. Gluten-free and dairy-free tags require compatible plain ingredients and handling.
