Chickpea, cabbage & tomato skillet
A one-pan mix of tender cabbage ribbons, chickpeas and tomatoes with sweet paprika.

Let’s make it
- Heat the olive oil in a wide, deep skillet over medium heat. Add the onion and cook for 5 minutes, stirring, until softened.
- Add the cabbage in two handfuls, turning it through the oil as it wilts. Cook uncovered for 6–8 minutes until its volume reduces and some edges turn lightly golden.
- Stir in garlic and paprika for 30 seconds, then add tomatoes, chickpeas, water and salt. Cover and simmer for 8 minutes, stirring once.
- Uncover and cook for 4–6 minutes, until the cabbage is tender but still distinct and excess liquid has mostly evaporated. Stir in lemon juice and divide into four equal portions.
- Refrigerate leftovers promptly in shallow containers at 40°F (4°C) or below, use within 3–4 days and reheat to 165°F (74°C).
