Cinnamon apple butter
A thick cinnamon-scented apple spread made by slowly reducing a smooth skin-on apple puree; no dairy butter is added.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Rinse and core the apples, retaining their skins. Weigh 2.2 lb edible apple and chop into 1/2-inch / 1-cm pieces. Put in a wide heavy saucepan with the water and lemon juice.
- Cover and cook over medium-low heat for 20–30 minutes, stirring occasionally, until the apples and skins are very soft. Lower the heat if the bottom catches.
- Take the pan off the heat. Use an immersion blender with its head kept submerged to puree all apples and liquid until smooth, following appliance instructions for hot food. Do not strain out the skins.
- Stir in sugar and cinnamon. Cook uncovered over low heat for 60–90 minutes, stirring frequently and scraping the base, until darkened, thick and spreadable. A spoon drawn through it should leave a trail that stays open briefly. Add cooking time if needed; never increase heat to the point of scorching.
- Cool for 20 minutes in a shallow heatproof container, then divide the entire batch into twelve equal portions and refrigerate promptly, within 2 hours of cooking. Use within 3–4 days or freeze portions promptly for longer storage. This is a refrigerated spread, not a tested canning or shelf-stable recipe.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. One serving is one twelfth of the finished batch, not a fixed tablespoon volume. Water loss changes portion weight and concentration, not total measured ingredient nutrients. No dairy butter is used. Vegan/gluten-free/dairy-free tags depend on suitable sugar, cinnamon and lemon juice labels; no health or allergen-safety claim.
