  1. Cook beef and onion in a large skillet over medium-high heat, breaking the beef into crumbles, until beef reaches 160°F (71°C). Carefully drain excess fat.
  2. Stir in chili powder, cumin, salt, and tomato paste for 1 minute.
  3. Add water, reduce heat, and simmer for 5 minutes until the filling is moist but not soupy.
  4. Warm taco shells according to their package. Fill with beef, lettuce, tomato, and cheese just before eating.
