Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat the oven to 425°F (220°C). Cut eggplant lengthwise into 8 planks about 1/4 inch (6 mm) thick. Weigh all 21.16 oz edible eggplant, reserving irregular ends as diced filling pieces. Spread planks and trimmings on parchment-lined trays; brush with 0.705 oz oil and sprinkle with half the salt. Roast 20-25 minutes, turning gently halfway, until tender and bendable.
  2. While eggplant roasts, warm the remaining 0.282 oz oil in a skillet. Cook garlic and cumin for 30 seconds, add tomato and remaining salt, and simmer 5-7 minutes until excess juice evaporates. Mash chickpeas coarsely with a fork; stir into the tomato with lemon, parsley, pepper and the roasted diced trimmings.
  3. Let planks cool for 5 minutes until safe to handle. Divide filling into eight equal amounts, mound at the broad end of each plank and roll gently. Place seam-side down in an ovenproof dish. Bake for 10 minutes until heated through. Rest 5 minutes; serve two rolls per portion. Refrigerate leftovers within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
