Fresh mint & vinegar sauce
Finely chopped mint steeped in a small amount of sweetened water, then mixed with red-wine vinegar for a thin, sharp sauce.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Wash mint leaves, dry well and weigh about ⅞ oz (25 g) after removing tough stalks. Chop finely with a sharp knife; do not puree.
- Put mint, sugar and salt in a heatproof bowl. Pour over about 3 ½ tbsp (50 g) just-boiled water and stir until sugar dissolves. Leave 10 minutes to steep and cool; retain every drop of the steeping liquid.
- Stir in all vinegar and leave 20 minutes for the flavors to blend. The finished sauce is thin with visible chopped leaves, not an oil emulsion or mint jelly.
- Stir from the bottom before dividing the complete sauce into 6 equal shares so leaves and liquid are distributed together. Refrigerate promptly in a covered container and use within 2–3 days; the leaves naturally darken. This is not a shelf-stable preserve.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Six equal shares of all leaves and liquid. No meat or other serving accompaniment included. Vegan/Gluten-Free/Dairy-Free eligibility depends on labels and preparation cross-contact; no allergen-safe claim.
