Ginger chicken rice porridge
Long-grain rice slowly breaks into a soft savory porridge with shredded chicken, ginger and scallions.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Combine rinsed rice, 3.31 lb water and ginger in a heavy pot. Bring to a boil, lower to a gentle simmer and cook partly covered for 45-55 minutes, stirring and scraping the bottom every 5-10 minutes, until grains split and begin to thicken the liquid.
- Add chicken pieces, salt and the reserved 10.58 oz water. Return to a gentle simmer and cook for 12-18 minutes, stirring, until the thickest chicken pieces reach 165°F (74°C). Remove the chicken with a slotted spoon and shred with two forks on a clean board.
- Return shredded chicken to the pot with scallions, sesame oil and pepper. Simmer 3-5 minutes, stirring, until the rice is very soft and the chicken is hot. Divide into four equal bowls; no additional toppings are included. The porridge thickens on standing. Refrigerate promptly in shallow containers within 2 hours, use within 3-4 days, and reheat to 165°F (74°C).

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
