Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oven to 375°F (190°C). Heat 0.529 oz oil in a skillet over medium-low heat. Cook onion with 0.0353 oz salt for 10-12 minutes until soft, then add garlic for 1 minute. Spread across the base of an ungreased 10-inch (25 cm) round, 2-quart (1.9-liter) baking dish.
  2. Slice eggplant, zucchini and tomatoes into even 1/8-inch (3 mm) rounds; halve any very large rounds. Arrange alternating slices in overlapping concentric rows over the onion, leaning them slightly rather than stacking several flat layers. Pour all tomato cutting juices into the dish.
  3. Mix remaining 0.705 oz oil with thyme, remaining 0.106 oz salt and pepper. Brush and spoon over the vegetables, reaching between the slices. Cover tightly with foil and bake 35 minutes.
  4. Uncover carefully, keeping face away from steam, and bake 35-45 minutes more until eggplant is fully tender and edges lightly browned. If edges color before centers soften, loosely cover again. Rest 10 minutes; divide all vegetables and juices into four portions. Refrigerate within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All vegetables, oil and baking juices divided equally among four portions. No cheese or bread included. Vegetable bulk and olive oil as the only added fat meet the documented Mediterranean-style ingredient pattern. Plant-only ingredients support vegan/vegetarian and dairy-free criteria; check seasoning labels and cross-contact for gluten-free suitability.
