Let’s make it

  1. Rinse the rice in a fine sieve until the water runs less cloudy, then drain well. Heat the oil in a medium saucepan with a tight lid and soften the onion over medium heat for 5 minutes.
  2. Add the drained rice and stir for 1 minute. Add the water and salt, bring to a boil, cover and turn the heat to its lowest setting. Cook gently for 15 minutes without lifting the lid.
  3. Quickly scatter the frozen peas over the rice without stirring. Replace the lid and cook on low for 5 more minutes. Check that the rice is tender and the water absorbed; if still firm, add 1.06 oz hot water and cook covered for another 3–5 minutes. Extra water does not change nutrition.
  4. Remove from the heat and rest covered for 5 minutes. Fluff gently with a fork, folding in the dill, lemon juice and zest. Divide into four equal side-dish portions.
  5. Do not leave cooked rice cooling in the pan. Divide leftovers into shallow containers and refrigerate promptly, within 2 hours, or 1 hour above 90°F (32°C). Use within 3–4 days and reheat to 165°F (74°C).
