  1. Heat the oven to 425°F (220°C). Toss the carrots with 0.494 oz oil and half the salt on a large rimmed baking sheet. Spread in one layer and roast for 15 minutes. Use a second tray if they would be crowded.
  2. On a separate board, flatten very thick ends of the chicken to an even 3/4 inch (2 cm). Coat with the remaining oil and salt, paprika, pepper and garlic. Wash hands and utensils after touching raw chicken; do not wash the chicken itself.
  3. Turn the carrots and make space for the chicken, keeping everything in a single layer. Roast for another 18–25 minutes. Check each breast with a thermometer inserted into the thickest center; all must reach 165°F (74°C). Remove safely cooked chicken if the carrots need more time. Carrots should yield easily to a knife.
  4. Rest the chicken for 5 minutes. Toss the carrots with lemon juice and parsley, then serve with the chicken, dividing all pan juices and vegetables into four equal portions. Refrigerate leftovers within 2 hours, use within 3–4 days and reheat to 165°F (74°C).
