Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Simmer the lentils with 17.64 oz of the water for 25-35 minutes until tender. Keep any remaining liquid. Meanwhile blanch the eight cabbage leaves in a separate large pot of boiling water for 3-5 minutes until flexible. Drain; shave thick ribs level with the leaf and finely chop the removed ribs.
  2. Heat oil in a skillet. Soften onion and the chopped cabbage ribs for 7-8 minutes. Add carrot and cook 4 minutes. Stir in garlic and cumin for 30 seconds. Mix with drained cooked lentils, half the salt and pepper; keep the lentil cooking liquid for the sauce.
  3. Heat the oven to 375°F (190°C). Stir tomatoes, remaining 7.05 oz water, all retained lentil liquid and remaining salt together. Put half into a 9-by-13-inch (23-by-33 cm) baking dish. Divide the filling equally among the leaves, fold sides inward and roll from the stem end. Place eight rolls seam-side down in the sauce.
  4. Spoon remaining sauce over the rolls, cover tightly and bake for 35-45 minutes until cabbage is tender and the filling reaches 165°F (74°C). Rest for 10 minutes. Serve two rolls with one-quarter of the sauce per portion. Refrigerate within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Ingredient states match their named profiles: raw edible produce and proteins, dry grains, drained canned beans and frozen unprepared peas. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted bread wedges, sweet potato rounds, fish cakes, cabbage rolls, breakfast squares and cookies are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
