Lentil & eggplant moussaka
Roasted eggplant and a thick lentil-tomato sauce bake beneath a yogurt, egg and Parmesan topping.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat oven to 425°F (220°C). Slice eggplant into 1/3-inch (8 mm) rounds, brush both sides with about ⅞ oz (25 g) oil and sprinkle with 2 g salt. Roast on parchment-lined trays for 25–30 minutes, turning once, until tender. Meanwhile simmer lentils in about 3 cups (700 g) water for 25–35 minutes until tender, adding plain water if needed. Drain thoroughly and retain all lentils.
- Cook onion in remaining about 1 ⅓ tbsp (10 g) oil for 8–10 minutes. Add garlic, cinnamon and oregano for 1 minute, then tomatoes, remaining 2 g salt and pepper. Simmer 12–15 minutes until thick; stir in all lentils. The mixture should mound softly without watery liquid. Reduce oven to 375°F (190°C).
- Arrange half the eggplant in an ungreased 8-inch (20 cm) square baking dish at least 2 1/2 inches (6 cm) deep. Spread all lentil sauce over it, then remaining eggplant. Whisk yogurt, eggs and cheese until smooth and spread over the top.
- Bake 35–45 minutes until topping is set and lightly browned and the center reaches 165°F (74°C). Rest 20 minutes before dividing into six equal portions. Refrigerate leftovers in shallow containers within 2 hours, use within 3–4 days and reheat to 165°F.
