Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oven to 325 F / 165 C. Spread pecans in one layer on a dry tray. Toast 8-10 minutes, stirring halfway, until fragrant and slightly darker; watch closely near the end. Cool on the tray for 10 minutes.
  2. Transfer all pecans to a food processor rated for nut butter. Process in short runs, stopping to scrape the bowl with the machine off. Continue through the crumbly and clumping stages until a spread forms, usually 5-15 minutes depending on the machine.
  3. Pause whenever the bowl or motor gets hot and follow the manufacturer's duty-cycle limits; cooling breaks may add time. Do not add water or unmeasured oil to force blending.
  4. Add maple syrup, cinnamon and salt only after the nuts have become butter. Pulse just until incorporated. Expect the syrup to thicken the mixture into a spoonable spread rather than a pourable sauce.
  5. Scrape the full batch into a clean covered container and divide into twelve equal portions. Refrigerate and use within 3-4 days, stirring gently if oil separates. Toast or fruit served alongside is separate.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All ingredients divided by twelve; no measured final tablespoon yield claimed. Contains pecans. Vegan and Dairy-Free require plain nuts and pure syrup without dairy/honey additives; Gluten-Free requires label and cross-contact checks. No food processor oil or water added.
