Let’s make it

  1. Heat the oven to 425°F (220°C). Line a large heavy rimmed baking sheet with parchment rated for this temperature and brush with 0.529 oz oil. Coarsely grate the potatoes and onion.
  2. Wrap the shreds in a clean sturdy kitchen towel and squeeze firmly over a bowl. Let the liquid stand for 5 minutes, pour off the watery top and return the settled potato starch to the squeezed shreds.
  3. Mix in the egg, flour, salt and pepper. Divide into 12 equal mounds on the prepared tray and flatten each to about 8 cm wide and no more than 8 mm thick. Brush the tops with the remaining 0.529 oz oil.
  4. Bake for 18–22 minutes until the undersides are golden and release with a thin spatula. Turn carefully and bake for another 10–15 minutes until both sides are browned and the centers are cooked through, reaching 160°F (71°C).
  5. Serve three latkes per portion. Refrigerate leftovers promptly and use within 3–4 days; reheat to 165°F (74°C). Nutrition counts all potato, onion and oil before draining, so it may modestly overestimate nutrients lost in the squeezed liquid.
