Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oil in a 4-quart (3.8-liter) pot. Cook onion, carrot and celery over medium heat for 8–10 minutes until softened. Add garlic and finely chopped rosemary for 1 minute. Stir in tomato paste and cook 2 minutes, stirring so it does not scorch.
  2. Add chickpeas, water, salt and pepper. Bring to a simmer and cook 10 minutes. Scoop about one third of the chickpeas into a bowl with a little broth, mash with a fork and return everything to the pot; no liquid or chickpeas are discarded.
  3. Bring back to a gentle boil, stir in dry ditalini and simmer uncovered for 10–13 minutes or until the pasta is tender, stirring frequently along the bottom. If it becomes too thick before pasta is cooked, add small amounts of hot plain water. Keep all soup liquid.
  4. Rest 3 minutes and divide all soup into four equal bowls. Refrigerate leftovers in shallow containers within 2 hours, use within 3–4 days and reheat to 165°F (74°C), adding plain water as needed because pasta continues absorbing broth.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All soup including broth divided into four portions. No cheese, bread or finishing oil included. Vegan and dairy-free require pasta and packaged ingredients without egg, dairy, meat or fish ingredients; check labels. Mediterranean-style tag reflects legumes, vegetables and olive oil, not a health claim.
