Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oven to 300°F / 150°C. Line a 13-by-18-inch / 33-by-46-cm rimmed baking sheet with parchment; no extra greasing oil is needed.
  2. Mix rolled oats, chopped pecans and pepitas in a large bowl. In a second bowl whisk pumpkin, maple syrup, canola oil, spices and salt until uniform.
  3. Fold all pumpkin mixture into the oats, scraping both bowls, until no dry pockets remain. Spread over the lined tray in an even thin layer, including the corners; do not mound it.
  4. Bake for 45-60 minutes, gently turning sections and moving the edges toward the center every 15 minutes. Rotate the tray when stirring. Spread the mixture thinly again each time. It should look dry and lightly toasted; if it is still damp, continue in 5-minute increments, watching the nuts closely.
  5. Cool on the uncovered tray for at least 30 minutes until completely cool. A small cooled sample should be crisp, not soft or damp. If needed, return the batch to a 275°F / 135°C oven for 10-15 minutes, then cool completely again; this adds time.
  6. Break into small clusters and divide the whole cooled batch into twelve equal portions. Once completely cool, refrigerate in an airtight container and use within 3-4 days, or freeze for up to 2 months. Milk, yogurt and fruit are optional accompaniments outside this recipe and estimate.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. One serving is one twelfth of the complete batch. Final serving weight depends on evaporation; weigh the cooled batch and divide by twelve rather than assuming a cup yield. All measured oil, syrup, nuts and seeds are counted. No invented nutrient-retention adjustment is applied for baking. Contains pecans. Gluten-free classification requires verified gluten-free oats and compatible spice/seed labels and handling. Vegan/dairy-free tags require compatible ingredient labels; no allergen-safety claim.
