Roasted cauliflower & almond spread
Roasted cauliflower blends with almonds and lemon into a thick, lightly textured spread.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat oven to 425°F (220°C). Toss cauliflower with 0.705 oz oil and salt on a large rimmed tray. Roast 25-30 minutes, turning halfway, until tender with golden edges. Cool 10 minutes.
- Process almonds to a fine meal in a food processor, stopping before they become nut butter. Add roasted cauliflower, remaining 0.353 oz oil, lemon juice, garlic, water and pepper.
- Pulse, scrape the bowl and process until spreadable, retaining a fine almond texture. Follow the processor instructions for warm food. Include all roasted pieces and oil from the tray. Divide into eight equal portions.
- Refrigerate in shallow covered containers within 2 hours and use within 3-4 days. The nutrition estimate excludes any bread or vegetables served alongside. Check nuts and other packaged ingredients for diet-specific additions and cross-contact statements.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Profiles match raw edible produce and proteins, dry grains and flour, drained canned beans, tomatoes with juice, plain whole-milk yogurts and specified cheese. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
