Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat the oven to 425°F / 220°C. Halve the trimmed eggplant lengthwise, keeping the skin. Rub the cut faces with 0.353 oz of the olive oil and place cut-side down on a parchment-lined rimmed tray.
  2. Roast for 40–50 minutes, until the flesh collapses under a spoon and the skin is completely tender. If still firm, continue roasting in 5-minute increments. Cool for 10 minutes.
  3. Chop the roasted flesh and skin together. Transfer all of it and any tray juices to a food processor. Add the tahini, lemon juice, remaining 0.353 oz oil, garlic, cumin and salt.
  4. Pulse, scrape down, then process until spreadable with fine skin flecks. Divide into eight equal portions. Serve warm or refrigerate promptly and use within 3–4 days.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All measured oil and tahini are included; the estimate assumes the entire prepared batch is divided into eight equal portions. Vegetable bulk, tahini and olive oil support the ingredient-based Mediterranean-style screen. Vegan/gluten-free/dairy-free status requires suitable tahini and spice labels; sesame is present.
