Roasted garlic & cashew spread
A pale creamy cashew spread with mellow roasted garlic and lemon, without a dairy ingredient.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat the oven to 350°F (175°C). Put the peeled garlic and all 0.423 oz oil in a small covered ovenproof dish. Roast for 25-30 minutes until soft and lightly golden; do not let it turn dark brown. Meanwhile cover the cashews with freshly boiled water in a heatproof bowl and soak for 30 minutes.
- Drain the cashews thoroughly and discard the soaking water. Transfer to a food processor with the roasted garlic and every drop of its oil, lemon juice, salt and half the 3.53 oz blending water. Process until finely broken down, stopping to scrape the bowl.
- Add the remaining blending water and process until creamy with fine nut texture. Cool briefly and divide into eight equal portions. Nutrition counts the original dry cashew mass; soaking losses are not measured. Refrigerate within 2 hours and use within 3-4 days. Do not store this moist garlic spread at room temperature or under a layer of oil.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
