Baked sweet potato & feta rounds
Tender roasted sweet potato rounds topped with crumbled feta, parsley and lemon.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat the oven to 425°F (220°C). Line a large sheet pan. Cut the sweet potatoes into 12 rounds about ½ inch (1.3 cm) thick, using all 21.16 oz edible potato; divide uneven pieces among servings.
- Coat both sides with the measured oil and pepper. Spread in one layer. Roast for 15 minutes, turn gently and roast for 10-15 minutes more, until a fork enters the centers easily.
- Divide the feta over the 12 rounds. Return to the oven for 4-5 minutes to warm the cheese. Mix parsley with lemon juice and spoon evenly over the rounds.
- Serve three rounds per portion, distributing any loose topping equally. Refrigerate leftovers within 2 hours and use within 3-4 days; reheat to 165°F (74°C). Feta remains crumbly rather than melting into a stretchy layer.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Ingredient states match their named profiles: raw edible produce and proteins, dry grains, drained canned beans and frozen unprepared peas. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted bread wedges, sweet potato rounds, fish cakes, cabbage rolls, breakfast squares and cookies are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
