Toasted vermicelli & tomato soup
Short pieces of wheat vermicelli are toasted in oil before simmering in a smooth tomato broth.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Blend tomatoes, onion, garlic and 7.05 oz water until smooth. Keep all puree without straining.
- Heat olive oil in a 3-quart (3-liter) saucepan over medium heat. Add broken dry pasta and stir continuously 3-5 minutes until evenly light golden, not dark brown.
- Carefully pour in tomato puree, keeping face away from rising steam. Stir in tomato paste, oregano, salt and pepper. Cook 2 minutes, stirring, then add remaining 28.22 oz water and bring to a gentle simmer.
- Simmer partly covered 4-8 minutes, stirring occasionally, until noodles are tender; begin checking very thin angel hair after 3 minutes. Stir in cilantro, divide evenly among four bowls and serve promptly. Noodles absorb more liquid while standing. Refrigerate within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Four equal bowls include the entire soup, not drained noodles. Pasta brand, thickness and evaporation affect finished volume. No cheese, stock cube or side bread included; wheat present.
