Tofu satay skewers with peanut-lime sauce
Oven-roasted tofu skewers receive a short broiler finish and a warm peanut, ginger and lime sauce.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat oven to 425°F (220°C). Pat drained tofu gently dry without prolonged pressing, cut into 32 similar cubes and thread onto eight metal skewers, four cubes each. Whisk oil, 10 g soy sauce, cumin, coriander and turmeric; brush all coating over tofu on a foil-lined metal tray. Do not use baking parchment under the broiler.
- Roast 25–30 minutes, turning once carefully, until surfaces are dry and lightly golden. Move the tray about 6 inches (15 cm) below the broiler and broil 1–3 minutes, watching continuously, until browned at the edges without burning. Metal skewers remain hot; handle with mitts.
- While tofu roasts, whisk peanut butter, remaining about 1 ⅓ tbsp (20 g) soy sauce, lime juice, brown sugar, water, ginger and garlic in a small saucepan. Bring to a gentle simmer and cook 3–5 minutes, stirring frequently, until smooth and lightly thickened. If necessary add a little plain water to restore a pourable consistency; do not discard any sauce.
- Rest skewers 3 minutes. Serve two skewers with one quarter of all sauce per person, spooning any edible coating or tray juices over the tofu. No side dish is included. Refrigerate within 2 hours, use within 3–4 days and reheat leftovers to 165°F (74°C).
