Let’s make it

  1. Bring a large pot of unsalted water to a boil. Meanwhile warm the olive oil and garlic in a wide skillet over medium-low heat for 1–2 minutes until fragrant without browning. Stir in the chile briefly, then the tomatoes, olives, capers and measured salt.
  2. Simmer the sauce uncovered for 15–20 minutes, stirring occasionally, until thick enough to leave a trail behind a spoon. Keep the heat low enough to prevent scorching.
  3. Cook the spaghetti in the unsalted boiling water until just tender, following the package timing. Reserve 4.23 oz of cooking water, then drain. Add the pasta to the sauce and toss over low heat for 1 minute, adding the reserved water a little at a time only as needed for a coating consistency.
  4. Fold in the parsley and divide into four equal portions. No cheese or bread is included. Refrigerate leftovers within 2 hours, use within 3–4 days and reheat to 165°F (74°C). The estimate counts the full dry pasta amount; starch lost into discarded water is not deducted.
