Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Allow cubed butter about 30 minutes to soften until a finger leaves an indentation; do not melt. Keep tuna refrigerated after draining. Measure about 8 ½ oz (240 g) drained solids, breaking up large flakes.
  2. Beat softened butter in a small processor until creamy. Add tuna, lemon juice and pepper; pulse in short bursts, stopping to scrape down, until finely textured with no large butter lumps. Do not run long enough to warm the mixture.
  3. Finely chop drained capers and fold into the tuna butter with all parsley. Scrape all spread into a shallow covered container.
  4. Refrigerate at 40 F /4 C or below for at least 2 hours to firm. Take out only the portion needed about 10–15 minutes before serving to soften slightly. Divide the complete recipe into 8 equal portions.
  5. Use within 2 days and keep refrigerated. Limit cumulative room-temperature time to 2 hours, or 1 hour above 90 F /32 C. Butter does not preserve the fish; this is not a shelf-stable pâté.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Eight equal portions; no bread or crackers included. Contains fish and milk. Gluten-Free eligibility requires checking tuna and caper labels and preparation cross-contact.
