Walnut & bread garlic sauce
A creamy dairy-free sauce made by blending soaked bread and walnuts with garlic, lemon and olive oil.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Tear the bread, including its crust, into small pieces in a bowl. Pour over all 5.64 oz water and soak for 10 minutes, pressing occasionally until the crust softens. Do not squeeze out or discard any soaking water.
- Pulse walnuts in a food processor until finely chopped, stopping before they become nut butter. Add all soaked bread and water, garlic, lemon juice and salt.
- Process until mostly smooth, scraping down the sides as needed. With the motor running, slowly add all olive oil. Continue briefly until creamy and spoonable, with fine walnut flecks.
- Rest for 10 minutes before serving, then stir and divide into six equal portions. Refrigerate promptly in a covered container at 40°F / 4°C or below and use within 3–4 days; do not store this raw-garlic sauce at room temperature.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Estimate counts all ingredients divided into six equal portions; bread brands and final thickness vary. Contains wheat and walnuts. Vegan and dairy-free labels require suitable bread and other packaged ingredients; they do not guarantee allergen safety or absence of cross-contact.
