Whipped ricotta, honey & walnut spread
Whole-milk ricotta whipped until airy, finished with measured honey and finely chopped toasted walnuts.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Toast walnuts in a dry skillet over medium-low heat for 3-5 minutes, stirring, until fragrant. Cool for 10 minutes, then chop finely.
- Process ricotta, about ⅞ oz (25 g) honey and lemon zest in a small food processor for 1-2 minutes, stopping to scrape the sides, until lighter and smooth. Do not drain the ricotta.
- Spoon into a shallow serving bowl. Scatter all chopped walnuts and drizzle the remaining 10 g honey over the surface. Divide the entire spread and topping into eight equal portions.
- Keep refrigerated until serving. Refrigerate leftovers within 2 hours and use within 3-4 days. Contains milk and walnuts; honey makes this unsuitable for infants under 12 months. Bread and fruit are separate.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Each serving includes one eighth of the ricotta and all measured topping. Contains milk and walnuts; vegetarian enzymes and compatible labels required. No vegan or dairy-free tag.
