Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Drain and pat the peppers dry before weighing about 3 ½ oz (100 g), then finely chop. Grate the cold cheddar on the coarse holes of a box grater.
  2. Stir mayonnaise, lemon juice and cayenne in a bowl. Fold in all cheese and chopped peppers with a spatula until evenly coated, keeping recognizable cheese shreds.
  3. Cover and refrigerate for 30 minutes so the mixture firms slightly. Stir once and divide into eight equal portions. Bread, crackers or vegetables served alongside are separate.
  4. Keep at 40 F / 4 C or colder and use within 3-4 days. Return to refrigeration within 2 hours of serving, or 1 hour above 90 F / 32 C.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All five ingredients divided by eight; any accompaniments excluded. Contains milk and egg; verify cheese enzymes and mayonnaise ingredients for Vegetarian criteria. No gluten-free claim for variable condiment labels.
